Simple and Easy Fruit Cake


6 oz. flour

2 oz. ground rice

1 teasp baking powder

3 oz. margarine

1 oz. dessicated coconut

3 oz. sugar

2 oz. currants

2 eggs

2-4 Tablsp milk


Rub the margarine into the sieved flour, ground rice and baking powder. Add the coconut, sugar and currants, mix into a paste with the beaten eggs and milk until of the right consistency. Put into a prepared tin and bake in a moderate oven (350 degrees F) until cooked about one hour.

How to dress up the boring veg


Shake boiled or steamed vegetables with a knob of butter or margarine over low heat before serving. A little finely chopped parsley, onion or garlic improves the flavour.


All root vegetables, with the the exception of potatoes may be coated with creamy-white sauce before serving. This is a good method when serving a mixture of vegetables. If liked, the sauce may be covered with grated cheese and the dish placed under the grill, to brown the top.


Slice thinly and layer with white sauce in a baking dish, but this time potatoes may be used. Sprinkle with a few breadcrumbs and some grated cheese, heat through, and brown in the oven or under the grill.

How to cook Artichokes (Jerusalem)

1/ First scrub the artichokes, then peel them quickly into clean cold water, using a stainless steel knife or peeler and keeping them under the water as much as possible to prevent discoloration.

2/ Add a little salt and a squeeze of lemon juice or vinegar to keep them in good colour.

3/ Cook in boiling salted water, to which a little lemon juice is added.

4/ Cook until tender (approx. 30 min), and drain very well before dishing.

Serve with a lemon butter or a white sauce.

Spiced Apple Fritters


6 oz. flour

1 teasp baking powder

1/4 teasp mixed spice, ground cinnamon and ground cloves

2 teasp sugar

4 oz. chopped apple

1 egg (fresh or dried)

approx 1/4 pt. milk

plus oil or lard for frying


Mix together flour, baking powder, spices and sugar. Add finely chopped apple and mix to a creamy consistency with the beaten egg, and milk. Place spoonfuls at once into a frying pan containing a little hot oil or lard. Fry until golden brown on both sides.

Serve at once with a sweet sauce or dusted with either castor or icing sugar.
